Why Can a Ripe Orange Be Green?

An orange with green patches looks as if someone picked it too soon. Yet its peel can tell a different story from its flesh. In a warm-growing climate, an orange may reach eating maturity while green pigment remains in its skin. Some Valencia oranges do something even stranger: they turn orange and then gain green color again as summer arrives. The short answer is that peel color responds strongly to temperature and plant pigments. It is a poor test of sweetness on its own. The fruit and its jacket are keeping different calendars.
